A sweet and savory salad that is packed with flavor! This meal-worthy salad is full of fresh herbs, protein-rich hemp seeds, and salty feta cheese. Oaktown Spice Shop Umami Sea Salt is the secret ingredient to this special salad.

2 large sweet potatoes, cut into ½ inch cubes
1 red onion, sliced into half moons
1 tablespoon fennel seeds
1 teaspoon Umami Sea Salt
1 tablespoon olive oil
4 cups arugula
¼ cup parsley, chopped
¼ cup mint, chopped
½ cup feta cheese, crumbled
2 tablespoon hemp seeds
Dressing:
3 tablespoons white wine vinegar
1 tablespoon honey
⅓ cup olive oil
¼ teaspoon Umami Sea Salt
Preheat the oven to 400F.
Combine the sweet potatoes, onion, fennel, Umami Sea Salt, and olive oil in a large bowl. Transfer to a baking tray and roast for 25-30 minutes, or until golden.
Meanwhile, whisk together the white wine vinegar, honey, olive oil, and Combine the roasted vegetables, and arugula in a large bowl. Toss with parsley, mint, feta cheese, and hemp seeds.
Drizzle with the dressing. Enjoy!
