A sweet and savory salad that is packed with flavor! This meal-worthy salad is full of fresh herbs, protein-rich hemp seeds, and salty feta cheese. Oaktown Spice Shop Umami Sea Salt is the secret ingredient to this special salad.
Ingredients
- 2 large sweet potatoes, cut into ½ inch cubes
- 1 red onion, sliced into half moons

- 1 tablespoon olive oil
- 4 cups arugula
- ¼ cup parsley, chopped
- ¼ cup mint, chopped
- ½ cup feta cheese, crumbled
- 2 tablespoon hemp seeds
- 3 tablespoons white wine vinegar
- 1 tablespoon honey
- ⅓ cup olive oil

Directions
- Preheat the oven to 400F.
- Combine the sweet potatoes, onion, fennel, Umami Sea Salt, and olive oil in a large bowl. Transfer to a baking tray and roast for 25-30 minutes, or until golden.
- Meanwhile, whisk together the white wine vinegar, honey, olive oil, and Combine the roasted vegetables, and arugula in a large bowl. Toss with parsley, mint, feta cheese, and hemp seeds.
