Ever wonder how those pizza flavored snacks pack so much zesty flavor into a dry chip or cracker? The main answer is Tomato Powder! Consisting purely of dried tomato, this ingredient lets dry spice rubs and mixes have that unique flavor typically found in sauces or soups.


In this recipe, crispy crunchy bread cubes come to life with the savory umami notes of Tomato Powder and Parmesan cheese, along with the herbaceous zip of Erbe Italiane di Lusso. Fantastic in a Caesar salad or as a stand alone snack, these pizza inspired croutons are sure to be a hit!

Ingredients

  • ½ a loaf (12oz) of white bread cut into ½”-¾” cubes

  • ½ cup extra virgin olive oil

  • 2 tablespoons Oaktown Spice Shop Erbe Italiane di Lusso

  • ½ cup finely grated Parmesan or Pecorino cheese

  • ¾ teaspoons kosher style salt, such as Pacific Flake Sea Salt

  • Freshly ground black pepper, such as Tellicherry Peppercorns

  • 2 tablespoons Tomato Powder 

Directions

  1. Preheat the oven to 325F.

  2. Place bread cubes in a large bowl and drizzle with olive oil, tossing thoroughly to coat.
  3. Sprinkle in the Erbe Italiane di Lusso, Parmesan Cheese, salt and pepper, continuing to toss together so the bread gets coated as evenly as possible.
  4. Spread the bread in a single layer on a baking sheet and place in the oven, stirring every 10 minutes until the cubes are crispy; approximately 30-40 mins.
  5. Remove the croutons from the oven and immediately place in a large bowl, tossing together with tomato powder.  Doing this while the croutons are still hot helps the tomato powder stick.
  6. Let the croutons cool to room temperature before storing in an airtight container for up to a week.
