Created at Ritual Coffee by Nas Johnson, this hottie syrup blends Oaktown spices with brown sugar and honey, perfect for creating a hot or iced coffee drink with a little spicy summer kick! Makes approximately 1 cup of syrup.
1 cinnamon stick
3 whole cloves
2 star anise pods
30g dark brown sugar
70g honey
1.5g ground ginger
0.5g Vietnamese cinnamon
0.5g cayenne red pepper
100g hot water (at least 210 degrees)
Heat water to boiling.
In a heat safe bowl with a lid, add hot water, cinnamon stick, whole cloves and star anise. Let steep for 10 minutes.
Measure dark brown sugar and honey in a bowl and set aside.
Strain whole spices out of water and add the water to the sugar and honey. Whisk until dissolved.
Add ground ginger, ground cinnamon and cayenne to the mixture and whisk until well incorporated.
The spices will settle. Make sure to store in a container you can shake (or stir). Store refrigerated for up to 2 weeks.
