Sweet Heat BBQ Jackfruit Tacos

Sweet Heat BBQ Jackfruit Tacos

BBQ season just got sweeter with this recipe for Sweet Heat BBQ Jackfruit Tacos!

Jackfruit is a large tree fruit with a subtle flavor and a meat-like texture that is commonly used in South and Southeast Asian cuisines. Due to the size of the fruit (some reach 120 pounds!), you will typically find jackfruit canned or frozen.

It's the perfect plant-based substitute for pulled pork or chicken, and takes on the flavor of whatever you spice it with. In this case, we’re spicing it up with Oaktown Sweet Heat BBQ Rub, a unique blend of paprika, lemongrass, chiles and sugar. Pile this jackfruit into tacos, burritos, or on your favorite salad for a flavor-packed meat alternative.

Serves 4

2 tablespoons olive oil
¼ white onion, finely chopped
2 cloves garlic, chopped
3 tablespoons tomato paste
1 ½  tablespoons
Oaktown Sweet Heat BBQ Rub
2 cans (14 oz each) young jackfruit, drained and rinsed
⅔ cup vegetable broth, low sodium
2 tablespoons maple syrup
¼ cup unsalted pumpkin seeds, chopped
salt, to taste

To serve:

Cilantro, chopped
Corn tortillas
Sliced avocado
Red cabbage, shredded
Lime wedges

Heat oil pan over medium heat. Add the onion, cooking for 4-6 minutes, or until it begins to soften.

Add garlic and tomato paste, stirring to combine. Let cook for 2-3 minutes or until the garlic is fragrant.

Add the Oaktown Sweet Heat BBQ Rub and jackfruit, stirring to evenly coat.

Pour in the vegetable broth, syrup and pumpkin seeds.

Bring to a boil and let summer for 10 minutes, or until most of the liquid has evaporated. Salt to taste.
