2 lbs boneless skinless chicken thighs
2 tablespoons Oaktown Spice Shop Shawarma Spice
1/2 English cucumber, diced
¼ cup water
¼ teaspoon ground cumin
Preheat the oven to 400F.
In a large bowl, toss the chicken with the olive oil and cornstarch. Add the Shawarma Spice and kosher salt, tossing to combine.
In a medium bowl, whisk the tahini, lemon juice, water, salt and cumin until smooth. The tahini dressing will thicken over time, so add more water as needed to thin.
Serve the chicken with the salad, tahini sauce, chopped cabbage, and pickles in a pita bread or wrap.
