Raspberry Clear Mind Iced Tea

Raspberry Clear Mind Iced Tea

This bright and refreshing iced tea uses our Clear Mind Mint Tea, which pairs beautifully with the tangy sweetness of the raspberries. The recipe comes to us courtesy of our friends at Thistle.

Thistle makes fresh, delicious, and plant-forward meals that are ready to eat and conveniently delivered right to your door. Their meals embrace the abundance of produce and other whole foods available in their local regions, with flavors that are also globally inspired.

Serves 4

Ingredients

2 tablespoons Clear Mind Mint Tea
2 1/2 cups water, divided
4 cups ice
1 cup fresh or frozen raspberries
1/4 cup maple syrup (optional)

Directions

In a medium sauce pot, combine the loose tea leaves and 2 cups of water. Bring to a boil, and once boiling remove from heat. Let sit for 2-3 minutes, then strain into a large heat-proof bowl using a fine mesh sieve. Add the 4 cups of ice and stir.

Using a blender, food processor or immersion blender, combine the raspberries, 1/2 cup water and maple syrup (if using) and blend until smooth. Stir the raspberry mixture into the cooled iced tea and mix to combine. Serve over ice and enjoy!
