Spice up your salad with these bistro-inspired goat cheese balls rolled in a fragrant, nut-free Dukkah! Sweet, salty, earthy and herbaceous flavors marry in this simple salad for a satisfying side dish that hits all the notes.

Serves 4-6
Ingredients:
3 tablespoons Dukkah
4 ounces goat cheese (chevre)
6 cups mixed greens
1 cup cucumber, sliced
½ cup blueberries
½ cup steamed beets, sliced
2 green onions, chopped
1 cup fresh mint leaves, torn
Dressing:
1 teaspoon Dukkah
3 tablespoons red wine vinegar
1 teaspoon dijon mustard
½ teaspoon maple syrup
¼ cup olive oil
Sea salt and pepper, to taste
Directions:
Place the Dukkah in a shallow dish.
Use a measuring spoon to scoop goat cheese, ½ tablespoon at a time, and roll into balls.
Roll the goat cheese ball in the Dukkah to coat. Set aside.
Combine the greens, cucumber, blueberries, beets, onion, and mint in a bowl. Top with goat cheese balls.
Combine all the dressing ingredients. Drizzle over the salad. Toss and enjoy!
