Get a little taste of campfire with a spice-crusted tri-tip! Packed with smoky paprika, smooth coffee, spicy chipotle, and zingy orange zest, Oaktown’s Campfire Coffee Rub is the perfect grilling seasoning for anything from steak to chicken. Tri-tip, also known as Santa Maria Tri-Tip, is a relatively lean cut, and can be made on the grill, or in the oven. This recipe couldn’t be simpler. With just three ingredients, you can wow your summertime guests!
Ingredients

2-3 lb Tri-Tip, trimmed of excess fat (see note)

4 tablespoons Oaktown Spice Shop Campfire Coffee Rub

Salt to taste
Directions
Preparation:
Salt the tri-tip.
- Rub the tri-tip with the Oaktown Spice Shop Campfire Coffee Rub.
- Cover with plastic wrap, and refrigerate for 2 ½ to 3 hours.
- Remove the meat from the fridge 30 minutes before cooking.
On the grill:
Heat the grill over medium-high heat. Grill for 25 to 30 minutes, turning every 3 to 4 minutes until medium-rare (temperature 135F). Remove from the grill, and let rest for 15 minutes before slicing.
In the oven:
- Preheat the oven to 350 F. While the oven is preheating, heat a large cast iron or oven safe pan over medium-high heat. Add the tri-tip, and cook for 3 to 4 minutes per side.
- Remove the pan from the stove and place in the preheated oven, cooking for 15 to 20 minutes, or until medium rare (temperature 135F).
- Remove from the oven, and let sit for 15 minutes before slicing.
Recipe Note
We like to keep some fat on the tri-tip for richness.
