Baked Chicken with All Purpose Seasoning

This baked chicken recipe features Oaktown All Purpose Seasoning in a flavorful tomato paste-based marinade. The spice mixture works beautifully to coat the chicken with an amazing taste. This is definitely a seasoning mix that’ll be in heavy use in our pantry!
Ingredients
- 4 skin-on, bone-in chicken thighs
- 1 medium onion, thinly sliced
- 4 cloves garlic, smashed
- ¼ cup olive oil
- 2 tablespoons tomato paste
- 1 tablespoon chili garlic sauce or hot sauce of choice

2 tablespoons Oaktown All Purpose Seasoning
- 2 teaspoons brown sugar
- Salt to taste
- Cilantro, for serving
- Lemon juice, for serving
Directions
- Preheat oven to 425°F.
- Salt both sides of chicken and set aside. In a bowl, mix together olive oil, tomato paste, chili garlic sauce, All Purpose Seasoning, salt, and brown sugar.
- Rub chicken with mixture, making sure to coat under the skin. In a greased baking dish, add onions and garlic and drizzle olive oil over them.
- Add chicken (skin side up) on top. Bake uncovered for around 25-30 minutes or until chicken is cooked through. Broil for a couple minutes to brown the skin if desired. Serve with garnishes and desired side dishes. Enjoy!
