Serves 4
4 skin-on, bone-in chicken thighs
1 medium onion, thinly sliced
4 cloves garlic, smashed
¼ cup olive oil
2 tablespoons tomato paste
1 tablespoon chili garlic sauce or hot sauce of choice
2 tablespoons Oaktown All Purpose Seasoning
2 teaspoons brown sugar
Salt to taste
Cilantro, for serving
Lemon juice, for serving
Preheat oven to 425°F.
Salt both sides of chicken and set aside. In a bowl, mix together olive oil, tomato paste, chili garlic sauce, All Purpose Seasoning, salt, and brown sugar.
Rub chicken with mixture, making sure to coat under the skin. In a greased baking dish, add onions and garlic and drizzle olive oil over them.
Add chicken (skin side up) on top. Bake uncovered for around 25-30 minutes or until chicken is cooked through. Broil for a couple minutes to brown the skin if desired. Serve with garnishes and desired side dishes. Enjoy!
