Moroccan Tagine
For a lovely rub for fish, make a paste with 1 part spice, 2 parts olive oil and 3 parts citrus juice. Rub liberally and marinate and bake or pan-fry.
Featuring the mild heat of ancho chiles, a touch of cilantro and parsley and a delicious citrus tang, this also works wonderfully with chicken or homemade hummus.
