The best thing to do with leftover cooked chicken is to make a chicken salad, filled with crunch and a little sweetness, in a creamy dressing. Perfect in a sandwich, wrap, on a cracker, or on lettuce, chicken salad is a simple but satisfying addition to your lunchbox!

Ingredients

  • 2 cups shredded chicken
  • 1 stalk celery, finely chopped
  • 1 shallot, finely chopped
  • ½ cup roasted cashews, roughly chopped
  • ⅓ cup dried cherries
  • ¼ cup mayonnaise
  • ¼ cup plain yogurt
  • 2 teaspoons Oaktown Spice Shop Madras Curry Powder
  • 1 teaspoon honey
  • ½ teaspoon lime zest
  • 1 teaspoon lime juice
  • ¼ teaspoon kosher salt

Directions

  1. In a large bowl, combine the chicken, celery, shallot, cashews, and cherries. Add the mayonnaise, yogurt, honey, Oaktown Spice Shop Madras Curry Powder, lime zest, lime juice, and salt.
  2. Mix until well combined.
