Fenugreek Seeds
You'll find fenugreek seed in Indian curries, vindaloo and panch phora, as well as Ethiopian Berbere. It has a somewhat bitter flavor, but roasting brings out notes of maple syrup.
"I'm a slow starter in the morning, reluctant to dive into caffeine right away. I slice off strips of orange peel until I cover the bottom of a pitcher, add two tablespoons of fenugreek seed, a tablespoon of honey, and 6 cups of boiling water to start my day. Fenugreek seeds bring a sweet maple taste to this drink that blends with the honey and orange peel beautifully." - Mayona's Staff Picks, 2021
