Cardamom Pods, Black

Black cardamom comes from the same family as green cardamom, but its flavor profile is bolder and smokier than its more delicate cousin. Smoky and strong, black cardamom features notes of menthol and camphor. Use it in concert with chiles, cumin, coriander and citrus in braised greens, lentils or rice dishes, or try it as an ingredient in a dry rub for meat. Grind the entire pod or just the inner seeds.
