Sweet & Smoky Apple Pie Filling

Add another dimension to your holiday favorite Apple Pie. For those of us that don’t have the biggest sweet tooth, our Sweet & Smoky Spice adds depth to a family classic.
Ingredients
- 2 tablespoons unsalted butter
- 2.5 lbs granny smith apples, peeled and cored, then cut into thick wedges

1/2 teaspoon Oaktown Spice Shop Sweet & Smoky Spice

½ teaspoon Vietnamese cinnamon
- ½ teaspoon salt
- ¾ cup sugar
- 2 tablespoons all purpose flour
- 2 teaspoons cornstarch
- 1 tablespoon apple cider vinegar
- 1 pie crust of your choosing
- ½ cup all-purpose flour
- ½ cup brown sugar
- ½ cup rolled oats
- 5 tablespoons melted butter

Pie filling and topping
Melt butter in a large saute pan. Add apples to the pan and turn and coat them in the butter. Cook over medium heat.
Meanwhile, whisk together spices, salt, and sugar and sprinkle over the apples. Stir to combine.
Cook apples until they become crisp tender, about 5 to 6 minutes.
- Add the flour and cornstarch and cook until well incorporated, about 2 to 3 minutes.
Once a thick caramel-like sauce has formed, remove apples from the pan and add apple cider vinegar and mix.
- Allow filling to cool completely.
Prepare the crumble topping: Melt butter and add it to a bowl with the sugar, flour, spices, and oats. Bring together slowly with a spatula. Mix until just combined and clumpy. Rest in the refrigerator.
Baking the Pie
Set oven to 425F. Make sure your rack is on the lowest level.
- Line pie plate with pie dough of your choosing. Place the lined plate into the freezer for at least 15 minutes.
- Once chilled, remove from freezer and add apple pie filling. Sprinkle crumble over the top and place on a baking sheet and then into the oven.
- Bake for 20 minutes, then lower the temp to 375f and continue to bake for 30-40 minutes. The filling should be bubbling which is your sign the pie is done!
- Remove from the oven and allow to rest and set up for 2-3 hours minimum.
