In Cambodian, Chrouk Metae means fermented chili. In traditional Cambodian cuisine, Chrouk Metae is usually served as a spicy condiment that enhances cooked meat and noodle dishes. 

The Angkor family recipe for their Cambodian Chrouk Metae, or chili paste, balances spiciness with the rich flavor of red chilis, making it a perfect accompaniment to traditional Cambodian food or fusion dishes. It does not contain fish sauce, yet it still boasts the full-bodied umami flavor for which Cambodian cuisine is so well known.

Whether used as a side or in a dipping sauce, cooking with Angkor Chrouk Metae as an ingredient creates a rich, authentic Cambodian culinary experience.

Ingredients: Red Pepper, Water, Shio Koji(rice, water, salt, ethyl alcohol [to preserve freshness]), Vinegar, Chile Peppers, Sea Salt, Cane Sugar, Dried Garlic. 

About Angkor Cambodian Food: Our chef and founder Channy Laux was born in Cambodia and came to the USA as a teenage refugee in 1979. Not knowing a word of English, she worked tirelessly to achieve her American dream.  

After earning MS and BS degrees in mathematics and computer science, Channy spent 30 years working as an engineer in the aerospace and biotech industries. Longing to carry forward her mother’s legacy, Channy walked away from the security of the corporate world and dedicated herself to following her mother's footsteps of spreading love and sharing Cambodian food that brings joy to everyone involved.

All of our sauces and pastes are made in the USA using all natural ingredients, no artificial color and no artificial preservatives.
