Piloncillo is unrefined whole cane sugar, mainly found in Mexico. It has an earthy, caramel-like taste, like a very intense brown sugar. Throughout Latin America it goes by other names such as chancaca and panela.
It can be used to sweeten drinks, as an alternative to white or brown sugar in desserts, or used to make a flavorful caramel.
