Our Tomato Achaar, a 2019 Sofi Award Winner, a 2016 Good Food Awards winner, a 2018 Frontburner Competition winner, and a 2018 FABI winner is a condiment made with locally-grown tomatoes, tamarind, a mix of Indian spices, red chili powder, unrefined cane sugar and sesame oil. It has a savory, spicy and tangy flavor. Use it just like you would Sriracha or harissa.
Traditionally it's eaten with rice, curry, dal and yogurt, but you can top it on most anything - eggs, sandwiches, grilled meats, noodles or even cook with it by adding it to lentils, soups, salad dressings. Mix it into mayo for dipping fries in or into guacamole to go with chips.
Ingredients: tomatoes, non-GMO expeller pressed canola oil, sesame oil, salt, garlic, spices (including turmeric), tamarind, contains less than 1% of jaggery (evaporated sugarcane juice).
About Brooklyn Delhi: Our recipes were developed by chef and cookbook author Chitra Agrawal. Since 2009 in Brooklyn, Chitra has specialized in serving, teaching and writing about Indian home cooking. She has been featured in The New York Times, Food & Wine, Bon Appetit, Saveur, among others for her cooking and is the author of Vibrant India: Fresh Vegetarian Recipes from Bangalore to Brooklyn (Penguin Random House, March 2017).
Chitra travels to India each year to visit family and gain inspiration for her recipes. Much of what her suitcase is filled with going back home is (you guessed it!) achaar in oh so many varieties - green mango, gooseberry, red chili, carrot, etc. After getting her fiancé Ben Garthus hooked on the stuff (and running out of achaar before her next trip), they realized that the only achaars available for sale in the US were salt-heavy, cooked with unhealthy oils & preservatives and lacked that homemade flavor.
