Interest in gut health and probiotics continues to grow, fueling fans of fermentation to expand their repertoire of techniques and recipes. And some like it hot. Fiery Ferments, a new cookbook from Kirsten K. and Christopher Shockey, delivers with more than 110 formulations for spicy fermented condiments including sauces, salsas, relishes, and chutneys, plus recipes for dishes and drinks that use them. 

In this workshop, Kirsten will be focusing on creating fermented hot sauces, which can be made in your own kitchen. Chiles take the spotlight, with recipes such as Aleppo Pepper Mash, a technique that can be used to turn your favorite chile pepper into a fermented hot sauce. This will be taken a step further when made into an Aleppo Pomegranate Sauce. We will also make a few herb-based flavor pastes such as Thai Pepper Mint Cilantro Paste. While there are eye-popping, super spicy sauces, there are also plenty of options for people who love stimulating, flavorful food but prefer not to singe their mouths. And just to be safe, every recipe includes a heat index.

By marrying the health benefits of probiotics with heat, Kirsten will demonstrate the best cooking techniques for preparing your own ferments, plus plenty of recommendations for how to use them at home. Each guest will receive a few original recipes and correlating Oaktown spices. Fiery Ferments will also be available for purchase. 

About the authors:

Kirsten K. Shockey and Christopher Shockey are the coauthors of the best-selling Fermented Vegetables. They got their start in fermenting foods with their farmstead food company, where they created more than 40 varieties of cultured vegetables and krauts. Their current focus is on teaching the art of fermenting vegetables through classes and workshops at their farm. They live on a 40-acre hillside homestead in the Applegate Valley of southern Oregon.
